RECIPE PREPARATION Strawberry clafoutis dessert:

I cleaned the strawberries and placed them in the tray lined with butter.

I mixed the eggs with the sugar until I got a foam, then I added the milk, flour, and vanilla and I mixed until I got a dough a little thicker than the one for the pancakes.

I poured the dough into the pan and baked the cake for about 40 minutes at 200 degrees C.


Strawberry mousse

In addition to the multivitamins they contain, strawberries are known to be a good immune booster, an aid in the prevention of cardiovascular diseases, such as diabetes or even cancer.
Strawberries contain a very high level of nitrates, which improve blood and oxygen circulation through the muscles. Thus, they can be consumed before training for better endurance and accelerated calorie burning.

Ingredient:

200 g fresh chopped strawberries, 100 g sugar, 5 tablespoons water, 3/4 teaspoon plain gelatin, a pinch of salt, egg whites of 2 large eggs, 1/4 teaspoon vanilla essence, 120 g whipped cream (35% fat ).

Preparation: Mix the strawberries in a bowl with a tablespoon of sugar and leave for 10 minutes. Mix them in a blender to obtain a puree. Put the gelatin in 2 tablespoons of water, let it soak for 5 minutes.

In a saucepan, boil over medium heat 6 tablespoons of sugar with the remaining 3 tablespoons of water, salt and boil, stirring the syrup until the sugar has dissolved.

Then let it boil without chewing for about 4 minutes. With a mixer, beat the egg whites and the gelatin soaked in water until they froth (like the one for meringue), then gradually add the previously prepared syrup, mixing first at medium speed then at high speed until the composition hardens, add vanilla.

Beat the cream until it becomes cream. In a larger bowl, lightly mix the cream first with a quarter of the egg white composition, then gradually adding the rest of the egg whites. Finally add the strawberry puree. The composition for the mousse is ready.

Put it in the dessert glasses and leave them in the fridge for at least 2 hours.

For the dough:

  • 500 ml. - milk
  • 150 gr. - sugar
  • 70 gr. & # 8211 flour
  • 4 yolks
  • 1 teaspoon - vanilla essence

Method of preparation:

  1. Pour the milk into a saucepan and put the pan on low heat, you just have to bring the milk to the boil.
  2. Meanwhile, put the yolks in a large bowl, pour the sugar over them and beat well until they become shiny and frothy, then add the flour and incorporate it with the other ingredients.
  3. Take the milk off the heat and pour 1/3 of the amount over the egg cream. Mix quickly in the composition (so that the eggs do not manage to cook), after the milk with the egg cream has been incorporated, pour this composition back into the pan (over 2/3 of the remaining milk) and mix. Turn the cream over low heat, stirring constantly. When the cream starts to thicken, mix it on the fire for another 2 minutes. Extinguish the fire, pour the vanilla essence into the cream and stir a little more. Then pour the cream into a bowl and cover with cling film to avoid the formation of a film / crust on top. Let the cream cool in the fridge for 2-3 hours.
  4. Meanwhile, take care of the dough: In the bowl of a blender pour the flour, butter, powdered sugar, put the lid on and mix well. Then remove the lid, break an egg, pour a little vanilla essence and mix a little until the dough catches.
  5. Pour the dough on the table powdered with flour and spread it in a circle.
  6. Arrange the dough in a form with a removable bottom of 28 cm., Spread it evenly over the entire surface and edges. Remove excess dough and refrigerate for 30 minutes. Then prick the base and edges with a fork, and place a piece of aluminum foil over the dough and sprinkle beans on top (these will prevent the base of the dough from growing and the edges from shrinking during baking). Put the dough in the preheated oven at 190 degrees C for 10 minutes, then take it out of the oven and remove the aluminum foil together with the beans. Put the dough back in the oven and bake for another 15-20 minutes or until golden.
  7. Allow the dough to cool and start assembling the tart: cut the strawberries in half, then grease the base of the tart with apricot jam. Spread vanilla cream on top and finally decorate the entire surface with strawberries.
  8. Put the apricot jam in the microwave for 30 seconds and then grease each strawberry with a pastry brush to make them more shiny. Leave the tart in the fridge for 2-3 hours.
  9. Serve the tart with pleasure. Good appetite!
