RECIPE PREPARATION Muffins with cheese:

Beat eggs with a pinch of salt, add yogurt and mix well, then flour and baking powder. At the end, add oregano and grated cheese.

The resulting dough is put in muffin tins, about 2 full teaspoons each, then bake for 30 minutes on a suitable heat or until browned.

  • 350 g flour

  • 2 eggs
  • 50 g butter
  • 50 ml oil
  • 2 teaspoons vanilla extract
  • 250 ml of milk
  • 25 ml vinegar
  • 200 g jam

Preparation for the recipe for muffins with jam

The oven is preheated to 200 degrees Celsius.

Mix the milk with the vinegar and let it set for 10 minutes. You can use bottled milk if you already have it at hand. In the meantime, we will prepare the rest of the ingredients.

The flour is mixed with baking powder and salt with a fork.

Beat the eggs together with the sugar until it becomes a homogeneous composition. A thick and consistent paste should result and the sugar should be incorporated.

Melt the butter and mix with the oil. Add over the flour. Add the milk and vanilla essence and mix well with a fork. Add the composition with eggs and sugar and a third of the jam and mix until incorporated.

It should not be exaggerated with the dough, it seems to have lumps and is not mixed well, but it will not be a problem in the end.

Pour the composition into muffin tins and add a teaspoon of jam to each. With the help of a toothpick, we make figure 8 a few times, or some spirals, in each muffin to distribute the jam.

Sprinkle a little sugar on top of each muffin and put in the oven for 15-20 minutes until the toothpick test passes and brown nicely on top.

Leave to cool for 5 minutes and they are ready to be served. For presentation they can be left simple or powdered with sugar.
